I’ve been searching around and so far I think this one is sitting at the top of the list. I’d been considering a flat bottom for some leg room but I’m undecided on that. I think 340mm is the diameter I want, and I’m pretty sure I want leather vs suede. I also keep going back between red and yellow stitching.
I have the Spoon wheel which I bought through a legitimate source (not eBay or Amazon).
I also have a second S2000 with a Momo Monte Carlo.
They are the same wheel...but one has a Spoon horn button.
Spoon says their version is 340mm, but at some retailers it says 350mm. I measured close to 350mm. Same as my 350mm red stitch Monte Carlo.
Either way, its a fantastic wheel. Fits my hands really well.
I recommend using a Circuit Hero hub, as it puts the steering wheel in approximately the stock position and allows for use of a clockspring. It also comes with a SRS fooler.
I designed and made my own cruise control switch setups, but you can buy brackets for that now.
350mm is a nice size for this car. Admittedly, 340 would have been perfect, which is why I bought the Spoon wheel. Maybe they meant Japanese millimeters.
Leather is a good choice. I like the way it slips through my hands or gloves when I need it to. Suede was obviously a little more grabby. Leather also stays cleaner for longer.

I had a 350mm Monte Carlo but after driving my friends car with a 330mm wheel I changed it to a 330 Mod78 (some sites say 320mm some say 330mm, I measured it before but I forget which one it was).
Its all personal preference though, you really need to try both. Depending on your height and seating position a 330mm wheel may block the tach from your view
