Since you'll be outside of Virginia a radar detector is worthy of consideration; besides that, sunglasses... maybe some sunscreen if you drive top-down and are very brave.

I've taken about a dozen 8+ hour trips in my S2K, and I've never had a problem. In fact, I take my spare tire out to make room for extra luggage. Maybe I'm taking chances, but the chances of getting a flat on a long interstate trip are almost nil, and the probability of you actually using your spare even if you do get a flat are even less (a rear flat requires a front tire swap).
As Alexei mentioned, sunglasses are a must. Another nice thing to have is a set of earplugs. Driving at highway speeds with the ragtop can generate quite a bit of wind noise, and you have to really crank the sound system up to drown it out. But with earplugs, the wind noise is reduced dramatically, and you can hear the stereo much better.

We all know our car lacks the feature of an adjustable lumbar support for the seats. Get a small pillow and set it behind your lower back in front of the seat (lumbar support). You will thank me later!!!
