It depends on what vibe you're going for:
1. Aggressive, track-style driving -- shifting at redline, rev-matched downshifts, hard cornering, etc.
2. Top-down on a cool, sunny day -- just cruisin' without a care in the world, feeling totally free.
3. Top-down on a warm summer night -- stars in the sky, your girl in the passenger seat.
My picks:
1. I prefer the mute button (as a previous poster suggested). I want to be able to hear the engine. But for songs that make you have a hard time laying off the gas, most anything by Rage Against the Machine is good. My current favorite is the live version of "Bulls on Parade" from Live at the Grand Olympic Auditorium.

Satriani - Flying in a Blue Dream
Frodus - Chiriacho Summit
The Police - Walking On the Moon, Every Little Thing She Does is Magic
The Chemical Brothers - anything from Dig Your Own Hole
