So is there a technical term for the V? I know that it is the angle of the pistons, its a V motor, not an Inline motor, for I, but does it actually stand for anything?

Single=Single cylinder
I=Inline/Straight all of the cylinders placed in a single row
V=two banks of cylinders at an angle, most commonly 60 or 90 degrees.
Flat=two banks of cylinders directly opposite each other on either side of the crankshaft.
H=two crankshafts
W=Combination of V and straight, giving 3 banks, or two V's intertwined giving 4 banks.
U=two separate straight engines with crankshafts linked by a central gear
Radial/Rotary=pistonless/Wankel

Did I miss any?

Radial is not the same as rotary. Radial looks like a wheel with each spoke being a piston/cylinder (common on old aircraft)
