dip stick = useless!!
well.. here is the story:
I had oil change on my car at 11,000km last time. I check the oil level every 2 weeks. I have oil pressure and temp gauge and I monitor those readings closely. haven't been on track since then... only redline once every two to three days.
For the last week, I noticed my oil pressure flucuates a bit weirdly.. especially during VTEC.. it would hit 6.0Kpa and then drop to 5kPa...
So i checked oil level when the engine is cold... looks full with 4 X's and a bit more... (i checked the dip stick twice ... pull... check.. wipe... insert... pull .. check... wipe... both reads the same when engine is cold), being cautious and seeing the oil has a little brown in it, I decided to make an oil change... this is with car @ 15,000km
After the oil change, the mechanic told me that less oil came out... it was around 3.5 to 4 bottles of Oil (close to 3.5 - 4L)... we pour in 5.X bottle of oil in there last time at 11,000km
so... I have lost around to 2L of oil and the dip stick didn't really show.
Any one knows why?

When checking for oil level, I thought your engine should not be fully cold but only cool (i.e. about an hr. or two after you have shut down after running it in normal operating temperature)?
If you check it first thing in the morning after a nite of not driving, wouldn't the oil level be much lower since it's sitting in the pan?

First, a stick with only 3 X's is weird. You should go compare sticks with other S2000's. If you have the wrong stick, it may have different dimensions (wider, narrower, thicker, thinner) and this could cause oil to cling on it in an un-natural way.
Second, is your car parked on a level surface when you check the oil?
If you drain all your oil out (even without counting what's in the filter), you should be able to fill a 4L jug (and then some) with the old stuff. Something is definately wrong in your situation.
The owner's stipulates that you check the oil HOT. However, we've discussed this here and we believe that Honda says this only to compell people to do this check at each gas fill. Checking the oil stone COLD first thing in the morning should be easy and give a good indication of the level. NEVER check your oil when you have run the car for a time that does not permit getting coolant AND oil to operating temp. COOL oil hangs up too much and it will not flow back down to the oilpan in a reasonable amount of time. What you want is for as much of the oil as possible to be in the oilpan. This is the level the dipstick is trying to tell you.

I've also had success leaving the dipstick out before I go to bed. When I do that, the oil on the walls of the small diameter hole that the dipstick goes into flows down. Sometimes when I check my oil, as I pull up the dipstick, it gets oil on the sides of the hole, and when I put the dipstick back in to check, it gets all over the metal part of the dipstick, giving an inaccurate reading. Pull the dipstick out, clean it thoroughly, wait some minutes, and then check. This should yield more accurate results.
