Excessive Blow-By Problem, AP1?
I was at the track today. In my first session (about 2 laps in) car started to create a excessive amount of white smoke from the exhaust, after coming back into
pits, car was doing the same thing even during idle for a while. ( So it wasn't just SOW CW bowl blow by it was more)
We checked the spark-plugs and 2 or 3 of them had some oil on the edge, not so much to drip down but enough to feel with hand. Also bottom of spark-plugs' white/plastic like looking side looked like burned (not the metal sided that is at the bottom), an Acura technician there said that is normal after having a look.
I packed my stuff left to shop right after, when I arrived the shop there was nothing wrong with the car after 2 hours driving.
No matter how much we rev it, no smoke came out of the exhaust.
I should also mention that car was never over-heated or felt weird in terms of power even when smoke was there.
On the way home never over heated during the traffic and never let smoke out tonight even when I rev it to high rpms.
A reputable mechanic which works on lots of s2000s told me that : It is somewhat common to see this happen in s2000, and he though it was b/c of head gaskets around the spark-plugs, (he also recommended a valve adjustment with that.)
He also told me that way I setup my catch-can was not good and told me to re-locate it in order to provide better flow. (He meant the oil might be going backwards to engine, or air intake b/c of routing of my catch-can)
Lastly, I should add that I had little extra oil in the engine, above H on the oil check stick.

The catch can should run between the PCV and the IM. I would not put more than what is required for it to be full. What kind of oil are you running? How many miles on the motor? Did you get black flagged for the smoke?
I assure you 100% that the tube seals (what you called head gaskets around spark plugs) have nothing to do with what is happening with your car.

He also mentioned he overfilled his oil.
Overfilling is the problem. Great way to grenade an engine. Very ignorant thing to do.
Excessive oil get smashed by the crankshaft on decel, goes air born and gets sucked into the engine.
This is the usual result of oil over fill, consider yourself lucky:

Should I get any tests done to this car besides replacing the seals? My sparkplugs are scorched as well.
