I left mine blinding oncoming traffic, but I think under the hood near the headlights, theres a hole where you can stick a screw driver in. There should be an adjuster for each side in each hole.
i believe ricks2k.com has instructions on how to install their clear diffusers, and at the end of those instructions is how to adjust the headlight level for the S2k.

Its not the level thats wrong, its the beams pattern. I believe you have to getinside the housing and flip one of the filters or something.

Does anyone know how to adjust the RHD JDM headlights? I put in my new JDM Headlights and they are blinding the on-coming traffic....!
I know that in my E36 BMW I can un-screw the projector and turn it to the left to adjust it for LHD...can this be done with the S2000 too???

If I remember correctly there is a small metal ridge inside of the lens (between the bulb and the glass sphere). Although I have not done this myself, maybe it is possible to exchange this ridge for the ones found in RHD vehicles' headlamps.
The ridge dictates the beam pattern and as far as I know cannot be adjusted in any way.
The only other solution is to lower your headlamp beams so that you don't blind any oncoming traffic, but you'll have significantly reduced visibility on the right-hand side.
OK -- I have been there. done that. There is a baffle in each headlight that causes the beam pattern. The left and right hand drive baffles are not interchangeable because of hole/pins that are different between between the two baffles. Somewhere in history on either this board of the NY Metro board I posted a detailed description of how I did the physical changes to the JDM light baffles to make them suitable for use here in the states. A search should find the whole article. I note that the pics were posted in early January, '04 if that will help find the article.
