I would take it back to the shop....shouldnt they know what theyre doing?

 

Then it's their problem to find the cause and fix it.

 

They screwed up bolting the slave cylinder back on the transmission.

The slave cylinder pushrod is most likely cocked and not engaging the clutch fork correctly = pushrod falls out and clutch won't disengage.

Tell they to try again.

They got insurance (hopefully) if anything did go wrong. Get them to use it! There is a warranty too

that's hilarious and scary that their only response is "hey your car is broken, what do we do?"
