Default is the oil pump RPM dependant?

I guess what Im trying to get at is, is it better to cruise in 5th at around 3k RPMS, or 6th at 2300RPMS?

Yes, the pump builds pressure (and as a result, increases flow) as the RPMs increase. I think the car feels sluggish under 3k rpms when cruising so I usually try to keep it at or above that range anyways.

If you're wondering if your engine will be healthier because of the increase flow at 3000RPM vs 2300RPM....I'm not sure there will be a measurable difference.

6th gear @ 2300 rpm is going to be close to 40 mph right?

If its not city driving but true cruising I would use 6th, it saves fuel I guess.

IMO, your engine at operating temp is just as happy at that speed in 5th or 6th. (or in 1st, 2nd, 3rd or 4th )
Cruising in 1st at 40 mph is going to be noisy though.

My opinion on this...if you're not putting undue stress on the engine by trying to excelerate in 6th gear at 2300 rpms, then it's ok. I have a MY01 as well, and in town, I typically keep it in no higher than 4th gear, and no lower than 3000 RPMs. Way I figure it a car like this is designed to hold very high RPMs and endures much less stress from 3-5k RPMs than it does below 2500 RPMs
