Is this normal?
When I first start the car the engine starts and idles a bit odd...like the rpm's dip real, real low (sometimes down to 1 bar) and the engine gets kind of jerky. The rpm's go back up to 500 after a bit though.

When you start the engine, are you leaving the gas pedal alone? Giving it gas or revving it at the start only makes it that much harder for the ECU to stabilize the idle when ambient conditions are severe (this means extreme heat or cold).

I checked the fluids and such and everything seems fine.

Well. It's not just when I start the car. For like the first 10 minutes of driving...say I'm driving and I come to a stop. Normally the rpm's just drop to a stable 500 but in this weather it dips to as low as 1 bar, the engine gets jerkya nd it stabilizes at 500 after a second or two.

It happens exactly like you described. For like the first 10 or so minutes that the car is running, the revs drop below idle and the car shakes then it jumps back up to normal. Is this just because the ECU takes longer to stabilize itself in these extreme conditions like Xviper said?

It's "normal" up to the point it actually stalls. Then you need to check a few things out to help the ECU help itself - spark plugs, air filter, fuel injectors, type of gas used.
Look in the FAQs at the top of UTH and find a link to a thread titled something about MAP Whack and you'll see what to do. It's so much whacking the sensor as to wiggle the wiring harness to "freshen" it up a bit and securing it down tightly. This will ensure the ECU is getting the best signal it can.
