Just curious to know what exactly the happens when you adjust the suspension in a stock s2000, front or back.

What adjustments are you talking about? The only thing adjustable on a stock suspension is the alignment.

I dont know how to describe it but there are screws on top of the strut tower that you can turn and i didnt know if they made the car have tighter suspension or if it lowered the car slightly or anything at all.

It's an attach-the-shocks-to-your-car adjustment. If you think your shocks are too attached to your car, loosen those nuts, and voila, problem solved.
