Default Water temp - Heating Issues

Had the S parked for 3 years or so- started driving it this summer and noticed that the car was heating up to the point were it went to 230 deg on my defi gauge. So I figured the thermostat went bad or locked itself up etc. Took it to the shop had the coolant drained and replaced the thermostat. After that car was working in the range of 190-210 (temps in NYC have been in the 85-90 range most of July early August) Took the car out today and the temps went to 230 then down to 210 and under highway speeds went to 190-210 range and then back on the street 210-220.

What else can be causing this. I don't recall temps being this high before putting the car away.

Fans are working I am not sure the valve for the heater is working-

Bad water temp sensor?

Bad water pump?

System was checked for clogs during drain.

Thanks for reading.

Don't even know what it is lol

just read about it- mixed reviews- have anyone here had good results with that product?
Am thinking maybe I get a bigger rad to hold more coolant-

Another issue (which I never experienced before can be heat soak because the intercooler is in front of the radiator-

No do not use water wetter if you use coolant, it's fine if you use distilled water but it will cause slime and sludge if it mixes with coolant. Nasty stuff.

Just for comparison my S run at an operating temp of between 90 and 98 degrees C. If cold ie 10 degC then 85 to 90. If hot 25+degC then it sits between 95 and 105. Varies depending on engine load, speed, etc etc

You should not be surpassing 210 on a stock engine. Cruising typical should be in 190's. Sitting still at idle, 210 max then fan comes on to bring into 195 range.

Check fan operation. Possible clogged radiator.

You have a defective water pump, radiator, or thermostat -- assuming your temperature measure is accurate. Don't know about my Honda but the coolant temperature on my Expedition pulling my travel trailer across the mountains in Pennsylvania in the summer with the AC on never exceeds 200°F and the cylinder head temp runs about 5°F higher.
