Default By Saturday I'll hate the Irish

Started cooking corned beef and cabbage today. made enough to last till the weekend. I love it but it doesn't like me.

We already started. We had some last night and it was wonderful and it agreed with both of us - like you, it doesn't always like me but no problem this time. So she asked, do you want it again tonight? Yes madam!

Everything's different down here, including the celebration of St. Patrick's Day. Sure you can find corned beef and cabbage here and there. But the primary activity is watching or riding in St. Patrick's Day parades, when many green beads are thrown, along with potatoes and heads of cabbage. And of course much beer is consumed, a good bit of which is green. We have a significant Celtic population in New Orleans and on the Mississippi Gulf Coast and we need only the flimsiest excuse to have a party so St. Pat's is a natural.

St. Patty's day can come and go with no fanfare from me. I'm not a fan of the corned beef and cabbage. Can't even stand the smell of corned beef. I do, however enjoy a New England boiled dinner with a smoked shoulder (ham), potatoes, carrots and cabbage.

St. Patrick's day is a reallllly big deal down here, but corned beef & cabbage isn't that big of a deal. They all go for the green beer, parties, etc. This is a huge melting pot of folks from everywhere and they jump at any opportunity to celebrate with alcohol. Other than New Orleans, I've never been anyplace where alcohol flows as freely.

I searched far and wide until I found a Corned Beef Brisket that had a sodium count down in the 700mg range, and bought 3 of them

I could not wait, I had my 1st one last weekend, this weekend will be outdoor grilling something simple as it should be dry and into the 70's

I'll do up the other Corned Beefs sometime this summer when we are going to have a long wet cold rainy weekend...
