I have company coming. Just got this out of the smoker.

I'm serving Cuban Pork to Cubans.

Good question. Hope I can figure something out before dinner time since I'm the family cook. Can we just come over to your place for dinner? I can fake an accent.

That looks good! I'm having either chicken breast stuffed with broccoli and cheese and spaghetti and spinach or maybe ziti with sauce and spinach.
Or maybe cheeseburgers and a side of spinach.

I had cottage cheese with applesauce last night. I was planning on a big salad but I was beat after riding my ElliptiGO 33 miles and gaining 3,000 ft of elevation so all I could manage was scooping out the two items into a bowl. Big salad tonight, instead.

Whatever it is, I won't be cooking it. I cook all week long, but usually Fri or Sat we go out or order in. It is so cold here that we may order in. Brrrr...

It's an up and down ride to get that elevation gain, Robb. The highest I get is about 1,460 feet. If you click on this link, it should show a map of where I rode and an elevation chart of the ride as you scroll down.

That looks like a great work out that's a decent amount of calories burned and if you enjoy the workout that is the best way to do it.

ElliptiGOs are really fun to ride. The comments I get most often when I'm riding, after "What is that?" is "That looks like fun", and "That looks like a great workout."

I started a Facebook ElliptiGO Group a couple of years ago and we have 769 members now. Some are just curious about it but we also have a lot who converse often, just like we do here in Vintage.
