First you have to clean it up really well with a fabric cleaner (see the section on my website for upholstery cleaning). You'll need to make sure you use a wet/dry vac to suck out the cleaning solution when you're done because it's important you get any remaining sauce out of the seat or the odor will come back.

Then you have to spray an odor eliminator on the area. A lot of products like Febreeze just cover up the odor with a perfume. Get some Meguiar's Odor Eliminator. You can find it almost anyplace they sell Meguiar's.

In the spring this happened to my wifes car with milk (older posts). After doing all the cleaning invest in one of those ionic cleaner thingy. You've probably seem big house/ room ones at Sharper Image. I got one for the 12v (cig lighter) and leave it in the car a couple of months an no smell whatso ever and it clean the air in the car.

Steam the crap out of it. With a steam iron Hold it close as you can w/o touching the fabric and pump that steam. Use the odor eleminator, if possible leave the windows open.
Good luck

Some grocery stores rent carpet cleaners - I think Home Depot does too.

Just put a damp towel on the seat this way you can put the iron or whatever directly on the towel just keep it moist you'll be fine
