I didn't wanna look at the "official" instructions until its my time.Hell I rather pay the however many hundred bucks for someone else to install it.
My dad owns a 2007 S2k and he got a new top at a place on 1960 around Perry Rd. I think it was next door to that pest and pools store (if anyone knows what I am talking about). He paid like 1200 or 1300 for the entire job (parts and install). He is very happy with the way it looks but he says they used a top that is thinner than the OE top so it is a little louder on the freeway. He's older though (58) so he doesn't have the top down as much as I do and I wouldn't even notice with the bass in the trunk.
If anyone wants the name of the place if you are considering replacing your top let me know and I can get it from him. They did everything including replace the glass window. So I thought that was a pretty good deal considering the top all by itself at the dealership cost that much.

Also - forced induction is definitely the way to go. It makes the s2000 sound like a v8 lol.
