Also worth noting that a car will do in the rain exactly what it will do in the dry.
Only at lower speed.
If you find you are understeering into bends on a wet track, then your car will do it in the dry.

Reminds me of the day when you, Saz, TINTOP and I decided to go for a drive when the Ricky run was cancelled owing to bad weather. (TINTOP didn't actually drive, he passengered with me because I think he was a bit spooked by the precipitation.)
We didn't hold back and it was one of our most memorable outings. TT was surprised how rapid our progress was in the conditions.

Reading the article, i can agree with inflating the tires.
The big question is, has anyone done it in an S, and by how much did they overinflate the tires for the optimal grip / curvature. Does anyone know?

The article talks about 'operating temperatures' - road tyres are designed to work at most temperatures you'll find in the UK (some have reduced friction at low temps, but since trackdays are rarely if ever run on frozen circuits, it's unlikely you'll be outside the performance envelope).
Under inflated tyres are a problem, but over inflating them will make the car feel skittish and potentially reduce grip as the tyre cannot flex as much as therefore breaks away earlier.
Personally, all things being equal, I'd leave them as they are on the road, or inflate by a couple of PSI at a time if you must and watch out for them breaking away.
