Hi,
As for things to look out for....
Run in:- I gave it 600 mile (ish) but I do know people that have vtec'ed from day one at the point they picked it up......although my view is to go with the book and wait....600 miles isn't that long...
Oil:- check your oil, a lot! the engines tend to use a fair bit at the start. Somthing to do with the block being slightly porous and actually absorbing some oil as it's fibre reinforced (I think, but dont quote me on that.)
tyres:- halfords do a very cool digital pressure guage accurate to .5 psi or so for about 15 quid, check the pressures are as they should be (32 psi) just in case. Dont rely on forecourt gauges as they're usually pants.
Apart from that enjoy!!!!!!

A few obvious ones that the dealer should point out to you:
know where the dipstick, fuel cap cover release and secret compartments are. Make sure you have the locking wheel nut adaptor (if fitted)
Have some oil ready as the engine really does go through it!

I dont want to tempt fate, but 2 things to remember:
In the event of a rear wheel puncture do not put the space saver spare on the rear of the car - it will bugger the LSD. You have to switch a front wheel to the rear and put the spare on the front (and remember to replace the wheel to the front once you get a repair - front / rear wheels are different sizes)
In the event of a breakdown requiring recovery - the car must not be towed - make sure you request a flatbed recovery vehicle.
There - what a ray of sunshine I am!!!!!!!
Seriously tho', have a great day and enjoy your new motor.
As Ian says; 10W 30 mineral oil is recommended..... its available from Ford garages and precious few other places...
I must admit to using Halfords 5W 30 enhanced mineral oil as I just couldn't find 10/30 mineral.

Check the plastic spacers have been removed from suspension springs. The dealer should do it as part of the PDI. They're inserted prior to shipping to stop the car settling too much on the suspension. It's not always done.
Check that the front 'Mudflaps' have been put on.... the little rubber pieces at the rear of the front wheels. Again the dealer is supposed to fit them and it's not always done. It's even been suggested that they have an affect on the stability of the car at speed.... I dunno, but you should have 'em.
Make sure the tonneau cover tools etc. are in the boot.
Make sure you've got enough petrol to get off the forecourt!
Make sure you know where the petrol filler flap release button is.... you'll never find it!
A silly thing but there's documention you'll get where the salesman is supposed to familiarise you with the car and there's a check list he should complete including introducing you to the service staff. I've always regretted not getting that done but it was May, the sun was shining, the top was down and I couldn't wait to hit the road.
Make the buggers do it!
Have fun.

In a similar vein to Cedric's mudflap/airdeflector check, there are 4 holes behind the jacking points under the sills used for tie downs during shipping. These should be filled with rectangular rubber plugs during the PDI - make sure they're there (you can feel them).

Just another little pointless fact!
