Would 17x7 wheels be fine all front and back?

fine? yes....practical? no...stay with staggered wheels with the right offset as handling will be greatly affected with wheels the same width all around....it could even be dangerous....

The wheels in the back are an inch wider for a reason (ie. staggered). Leave them that way.

Staggered wheels are more so that when you use staggered tires, they will fit better on the rims. The major affects of having uniform rims front to back and using staggered tires is that ............................
1. Tires on one end will be perfectly compatable with the rim, while the tires on the other end is a bit "off".

or

2. Both sets of tires will be just a bit "off".

3. Chances are with rims of the same on all 4 corners is that the offset will be better for one end of the car than the other. This will change the stance of the car and affect the car's "track" at one end or the other or both.

Re: #1 and #2 above, each width of rim will have a range of tire widths that will work "comfortably". If a tire is too narrow for the rim, the sidewall will be stretched outward at the bead. If a tire is too wide for the rim, the sidewall will be pinched inward at the bead. To compensate, it may be necessary to increase or decrease tire pressure accordingly to maintain good tread pattern on the ground. This altered pressure can produce odd tire handling.
If you are willing to accept this compromise in tire handling (thus car handling), then getting uniform rims (and even the same tire sizes all around) is not a problem if you don't the car to those limits.
