I already checked for camber and rolled my fenders today

ouch, never lower the car without tires on it! you just bent the rims, maybe not noticable, but slightly.

I have shims on the center of the rims to keep them from getting bent!!! The edges of the rims never had any pressure applied to them.

wide fenders? not immediately I wanna try on the stock body before going wide body.

Sorry! your wheels have a very wrong offsets .....unless you're gonna do a widebody conversion. Didn't you do some research on what are the proper offsets for our S2000 before you bought them and also where did you buy them...does that store don't know what's proper offsets for the S2000. My Work Meister S2R front have +52 on 18x8 then on the rear have +63 on 18x9.....hope this help and perfecly no rubbing issues.
