Found a deal on Enkei NT03s... however.

i know this isn't the right offset, but how badly will they not fit? and whats the lowest offset we can go with an 8in width rim?

That is not a deal for the S2k. You would have to do body work to make that wheel fit. You really want to be close to 50mm offset for the 17X8.
