What is the maximum size tire I can put on the front OEM rims without rubiing?? Will 225/50-16's work??

Yes. But if you use the OEM SO2 rear tire, you've got a lot more tread than you need for the front. A non-OEM 225 has been done lots.

I have no problem with the originals but always thought more rubber on the ground is better!

Yes, but only if you keep the proper balance from front to rear. Otherwise you'll mess up the handling of the car by giving it too much under- or over-steer.

I've had good success with 225s on the front and more agressive negative camber on the back. In my case,
-2 degrees rear camber maintains balance while the 225s on the front greatly sharpen turn in.

The 225/50R16 is the maximum width tire for the front wheels. I guess the better option would be 225/50R16 front and 245/45R16 in the rear. This way you maintain a little stagger front to rear.
