Default which one for the rear?

I can't decide between the 2 sizes for the rear:

17-8.5 56mm or 17-8 45mm

I'm lowered one inch on spoon springs and looking at 245-40-17 for the rears and wanted to know which size would have a less likelihood of rubbing?

Well, a half inch is equal to 12.7mm. So, if you add a half inch of width and 12mm of offset, the clearance at the fender side of the wheel is virtually identical.

Using this methid, the two wheels you have chosen will only be about 1.7mm different as far as fender clearance... not much difference.

The 17x8.5 +56MM will be your best bet.

While those calculations our helpful in determining inside clearance, the outside edge of the rim is almost irrelevant because it is the tire width and not the rim width that will determine if you will rub or not. The +56 would then have 11mm of additional outside clearance over the +45 option based on the position of the tire. You would also get better performance out of the wider rim.
