Which size tires should I run?
The fronts would probably be okay but rears are too low

So what are my options, rims are already ordered, i noticed another guy with the same offset in the rear saying he rubbed on turns but only because he was lowered will I be ok at stock ride heigth? What is rolling the fenders? Any place in so cal that can roll them for me?
The offset is really off for the rear and if he's rubbing on a drop then I wouldn't get the setup. You'll probably be ok at stock height but then your screwed if you ever decide on dropping later so why bother?
Rolling the fender is bending the lip of the wheel well back to give you a couple of extra mm's space to prevent rubbing. This combined with an aggressive camber will prevent rubbing.
There is a specific tool to "roll" fenders but you can do it with a baseball bat. It's fairly easy to do and to find someone to do it for you.

I am running S03 205/50-17 in front on 17x7.5", and 245/40-17 on 17x8.5" in the rear.
I have a friend that has a set of two 225/45-17 S03s, and I'm considering buying them.
Question: If I put his 225/45-17 on my fronts, should I upsize to 255 or 265 for my rears? Or, should I stick with the 245s? If I am to upsize, what are the correct aspect ratios for 255 or 265 rears?
