So do you or do you not have CF Fenders?

If you do - you can NOT roll them...they're CF.

If you do not - you can roll them, but I wouldn't suggest it without the proper tools and halfway thorough explanation from someone who knows what they're doing.

Asking about offsets needed? Well...it depends. If you do have CF fenders, are they the same width as stock? Are they wider?

For stock body, if you wanted to run a good, flush staggered fitment, and you're ok with rolling / moving tabs / trimming liner / etc...then I'd suggest 17x8 F 17x9 R fitment with 225/45 and 255/40 tires. You could go with anywhere from +50 to +45 offset, wouldn't really go lower than that, maybe +40 at the lowest, but you'll have to work harder to fit the wheels.

Not real sure what else you wanted to know besides that.

dremel of a air saw.
just cut the lip, if you need to..

it's simple, but because it doesnt sound like you're aware of how to do it, i'd take it to a shop.

Yeah...I've never cut CF before, but methinks you'll want to feather it out as smoothly as possible. Splintering + water = fuct.
