Default Are these the correct offsets?

17 x 7.5 ET 48
17 x 8.5 ET 55

How well we these work on the S and what tire sizes should I put on them?

theyre almost perfect, what kinda wheels did you get? you can easily fit a 225 45 on the front and probaby a set of 255 40's on the rear depending upon your suspension setup.

I don't plan on dropping it any time soon, so stock set up is what I will be running. Will 255 40's fit on an 8.5" rim

I have not bought the wheels yet. I wanted to get the Volk te37's like Ninedeep has, but was given a price of over $3G's for the setup which is way to steep for me. I am leaning towards the BBS RG-R's at almost a grand less.

The sizes you mention will be fine. We should have the wheels into us in about 4 weeks. Let me know if I can help.
Thank you
