Default Tire Rack winter wheel/tire package feedback

I have an 07 S2K that I'm considering shodding with a -1 winter package from Tire Rack. One of my questions/concerns is whether the non-staggered wheel sizes (some package wheels are 7" all around, some are 7.5" all around and one is a 7"/7.5" inch stagger) are acceptable to owners. Are there previous buyers of such packaged setups here who can comment whether running staggered tire sizes on non-staggered wheels negatively affects handling? 205 fronts and 225 rears are certainly with the accepted widths for the wheels they sell, but is it apparent that the tires don't fit the wheels properly? Finally, with a non-staggered setup, one gets less than optimal offests...the wheels I'm looking at are +48, which is fine up front but not optimal at the rear. Any comments from previous buyers much appreciated...and if Jim from Tire Rack wants to chime in that's great, too.
