how wide of a tire can you safely put on the stock wheels front and rear

stick with 205/225 for S02 and 205/245 for all other brands. there's no reason to go with anything wider. not only will it handle differently (in a bad way), but it'll look stupid.

Nobody really makes a wider 16" tire than the 245/45R16. You can match that with 225/50R16 on the front.
