Default Wheel spacing

Does any one know how far you can safely space the rear wheel out before the drive shaft become the limiting factor?

The limiting factor is not the drive shaft, it would be the tire rubbing on the fender.

But to move the wheel out, you need a spacer between the hub mounting face and the wheel. This also requires longer lugs.

As long as you have room it won't be a problem. I have seen 285/30R18 on the S2000.
