Sorry a little new here. I am planning on getting some wheels for my s2k. How do I know what size wheels will fit my S2000 and also how low I should go to have a good look? Thanks for all your help!

Looks is totally subjective on the drop. Get adjustable coilovers and mess with the height till you like it.
The offset on those wheels is a bit low. You'd need rolled fenders and relocated tabs.

 

Regarding offsets of a wheel. How do you adjust this?

I found wheels I like on ebay, the size I want 17x8.5 but the offset is different. How do I get a different offset?

 

Lol seriously? You buy wheels with a different offset. The offset is a measurement on the wheel just like diameter and width. Look on Evasive, Kami Speed, Ravspec or any vendor site and they list the different options for what specs are available for a wheel.
