So I've been reading through the "Wheel Fitment Guide" sticky thread. It's an awesome guide.

I thought of fender rolling my S in order to "fit in what's not supposed to fit in", however, in that thread, it does not provide information on how much more clearance could I get from fender rolling?

I'm guessing that from fender rolling you'll get 1cm more clearance, assuming the inner fender edge is about 1 cm.
So based on the "Wheel Fitment Guide" thread, for:

Rear: +40 to +44 offset: 235 tires, 7.5" - 8.5" wide wheel

can you use +30 to +34 offset cause you just rolled 10mm fender?

I need enlightenment on these stuff!

Its hard to say for sure as there is other factors that allow you to fit more or less like camber tire size etc. Generally you can gain about 20mm of space + or - depending on camber tire size etc. You can also pull the fenders further allowing for more clearance. You don't gain quite that much in front but there is probably 10-15mm to be gained. There is a lot of variance here so there is no exact answer of if you roll them this is what will fit as it depends on a number of factors.
