Duece, just look at the chart. Find out the highest offset the wheels are available in, and choose the tire that fits.

pacific, no. Unless you want to pull fenders, add camber, etc., all in the name of getting some particular set of wheels on the car that were never meant to fit this car. It CAN be done, but IMO, it's not prudent.

Is there a lists of offsets that different wheels come in? I want 8 inches in the front and 9 in the rear, and I realize that for the tires available for those widths i'd need between +48 to a +58 offset in the front and +45 to +55 offsets in the rear, problem being is that so many wheels I look at dont seem to come in the offset i'll need. Is this a pretty common issue? or am I just an ass looking in all the wrong places?

Common issue for this car. Needs very high offsets. Most cars don't, this one does.

Find wheels that fit properly is a pain in the ass, no question. Unless you go to tirerack. They are one of the few that actually spend the R&D time to figure out what will really fit, and fit properly. No, I don't work there. But I have noticed their recommendations align with mine almost identically. Of course, they don't sell every single wheel and tire combo that will work on this car.

I recently bought a s2000 with upgraded rims (axis 5 spoke), but I don't know anything else about them, I am running Kumho Ecsta 225/40ZR18 on the front and Kumho Ecsta SPT 245/40ZR18 on the back. Is there anyway I can figure out exactly what rims I have and their offset?

I have Googled and there are about 5 different offset and width options for my rim, is there any secret to figuring out which one I have.

It is sometimes stamped on the back of the wheel somewhere. It may say something like 17x__JJ for the width. The first number is the diam and the second number is the width. For the offset it may say something like ET__. It might also be a sticker or cast in, if it's not stamped. Or, it may not be marked at all. You could measure a wheel but that will be difficult without taking the tire off.

Which wheels are they, and what diameter? The S2000 uses high offsets, so the most likely offset is the highest one they offer.

I couldn't find a stamp or sticker, but with more digging it looks like I might have:
Axis Reverb 18x8.5 on the front (offset is 45)
Axis Reverb 18x9.5 on the backs (offset is 55)

or
Axis Reverb 18x9.5 on the front (offset is 55)
Axis Reverb 18x10.5 on the backs (offset is 45)

I took a tape measure and went from the back edge that I coud see to where the spoke connects to the rim. There is definitely 1" difference from the front rim to the back rim. Whether it is 8.5 & 9.5 or 9.5 & 10.5 I'm not sure. From your chart I would say the latter makes more sense with the tire sizes I have
225/40 & 245/40.
