The app that I mostly use is AirVideo(free lite version), it allows to stream any video over wifi or anywhere You have internet. Mostly used by me to stream anime when I'm in bed lol. Can also convert pretty much any format to mp4 which will allow You to add any video to itunes.
VLC(free) is another great app until You get AirVideo.
I also ditched safari and now use terra(free no ads) instead, between many upgrades that it has over safari it has "open tab in the background" which was major reason for me to get it. It also seems a bit faster then safari.
Car and driver(freeeee) app allows you to d/l issues for free, its nice.
If You have cable or satellite there apps(all free) from major providers(comcast/dish/direct) that can communicate with your DVR.
Remote(free) app from apple allows you to control Your iTunes over wifi, play in multiple rooms(as long as You have apple express or apple tv in that room).
I have tons more apps but I don't know what Your interests are so just recommended few that are a bit generic.
Rant: I would not buy the iPad if II didn't get it for free, I also received moto xoom which runs android honeycomb and is much nicer, live wallpapers, actually useful camera with flash, browser with flash and apps that arent free from apple store are free on xoom.
PS. Jailbreak it.
PS 2. I assume You already know that You can create folders and that pressing home button twice takes You to "multitasking" menu as well as letting You control few other things when you slide to the left.
