OK, here's a list of times for open practice days at Wakefield. Eastern Creek does it too, but the 'Creek is pretty dangerous compared with Wakefield, and you have to share the track with more undesireable types.
I don't know details like how much or what safety gear you need, but I'll try to contact them and find out (last time I tried there was no reply). I think Takashi has done this before so maybe he can offer some wisdom.
For those who haven't been there, Wakefield is a very open, relatively low speed track near Goulburn. It's an excellent place to develop your skills and have some fun without too much risk to you or the car.

It's been a long time since I've been to Wakefield. But hell, I seem to prefer Eastern Creek. Anyway, it's basically the same deal ... Helmet and Park License, which in either case is just about paying or renting to get these achieved unless you want some CAMS degree type which is slightly different but once again it's all about money and time as well.
