Joe,
A lot of what the rims "have" to be will be determined on what tires your putting on, and what rim width you end up choosing.
Some people have fit +40-45 offsets all around without rubbing because they are using a narrower rim with smaller tread patterns. Aggressive camber helps.
If you will, consider +50 front and +63-65 rear as a standard, then you can deviate from there making adjustments to the rim width, tire width and camber to compensate for a not so optimum offset.
My recommendation is that you stick with wheels that have the correct staggered offsets for the S2000.

Thanks Tim! I want to pick up these set of wheels, I really want to just do 17x8.5 all around. I would offset the rears and go wider but thats what we did with my moms SL and it sucks when it comes to tires because you cant rotate the S.O.B.'s!! So I want to be able to rotate. What would you suggest I go (offset & tire size) with. I want a narrow side wall on the tire and again be able to rotate, I have my suspension already its only a 1.5 drop all around!?
Kind regards,
Joe
PS I'm eyeing a set of wheels which are 40+offset will they fit? Thier chart they supplied me with does not list a S2000 at all! But they do make the wheels in a 5 lug and 40+offset?!!?!?! I need help with this!

If your wanting to run +40 all around for rotation sake your going to more than likely have oversteer in the corners and you will not be able to run a 17x8.5 rim. That is flat out too wide for the front no matter how much you stretch a tire across it.
17x7.5 works with +48 offset so with a +40 you will have to go with a 205/50/17 front which will stretch the tire across the rim and give it a more angled side wall. Then for the rears you can use the same rim with 225/45/17.
If your set on same size all around so you can rotate front to back then you are going to be limited to a 17x7 inch rim with 215/45/17 all around. If you go 225
