from a strictly handling point I would say S2K. However, any of them can be improved quite a bit just by adding some well balanced suspension bits.
Out of the bow both the STI and Evo are a bit understeery, so I would tend to say that they are not quite on par wqith the s2k out of the box.
If you are talking track preped, it all comes down to driving style and what type of track you are running.

The S2000 is the greatest handling car in the entire world. It handles so well that there could be an earthquake going on and the S2K would still hold the ground. It handles so well if a sudden turn were to be made while going 150 mph, the world would start spinning in the opposite direction of the turn made.
