Why is it so difficult
I don't have an s2000 (anymore AND yet), so the time comes that I want to rent a convertible.
All of the major outfits give you the option on their websites, but as soon as you select one you get the "not available at this location" message.
In case anyone knows something I don't, I'm looking at the Tri Cities area (specifically Johnson City, Tennessee.
Otherwise it's just a rant.

I have had good luck with National with their emerald aisle (take your pick), as I have rented a G6 and Eclipse convertibles, Crossfire, Impala SS (300+ HP V8), Malibus with the big V6 and 6 speed paddle shifters and even an out of state Cadillac SRX. All these were rented at the midsize rate. All companies have trouble reserving specific cars, but it can be done as the sole G8 sitting in the lot at DFW was reserved.
You have to call and ask. Enterprise here rents Mustang Cobras and Lotus Elises, and Hertz has their own line of Corvettes with special wheels and paint but they don't show up on their websites. You have to call them and even still you might get someone who doesn't know what you're talking about.
You can also try independent exotic rental places. Here in Miami I've seen all kinds of crazy rentals, from Citroen 2CVs to freakin' Vectors.

I had a friend that rented the Hertz cobra GTH convertible. He said it was really really fun.
hah, same problem here... wanted to rent one in Scotland, no option on hertz, avis, etc... says "not available here".
Got off the plane when I got to Glasgow, went to the rental station in the airport and asked about this, got a reply "oh look, we've got an SLK, Boxster, etc... etc..."
go figure
