I think the problem is that the direct access course that i did gets you to a level to pass the test, but it doesnt actually teach you how to ride. Same with the driving test. I did the Ron Haslam track day on the Hornets (i had just bought a Hornet at the time) and even two 20 min track sessions taught me loads about how to corner and what the bike was capable of. I then went out with faster/experienced riders and thats how you develop your riding skills. Didn't stop me coming a cropper when a car turned across in front of me but i've never done anything seriously stupid! Bikes are an easy way to supercar level of performance, even a regular 600cc naked bike will outrun most cars and they are cheapish to buy and insure.
