Actually, and I personally feel this is sacrilegious... my buddy just bought a convection oven and um .. he used that.

to be fair, my steak was also done that way and tasted great. still.

I dunno - I've broiled 'em in a conventional oven a few times due to rainouts. Not bad but you have to be really careful about rack placement and it's a bit messy.

John - does the convection oven cook evenly or from the inside out?

the steak in question was less done inside than it was outside. i guess. i didn't eat it

also, i'm colorblind, so i have a lot of trouble telling how done (or not) a steak is. the red/pink/gray distinction ... .. meh.
