Turkey on a Bagel


4 raisin bagels
4 tablespoons reduced fat peanut butter
2 teaspoons honey dijon mustard
1 (12-ounce) can SPAM Oven Roasted Turkey, thinly sliced
1 small apple, thinly sliced
4 ounces reduced fat mild cheddar cheese

Spread half of each bagel with 1/4 of peanut butter and mustard. Place 1/4 of SPAM onto each of 4 bagel halves. Top with apples and cheese. Place remaining bagel havles on top. Slice and serve. Serves 4.

1 teaspoon olive oil
1 small yellow onion, chopped
2 garlic cloves minced

1 (10-ounce) container reduced fat prepared alfredo sauce
1 cup mushrooms, chopped
1 tablespoon Italian seasoning
1 (12-ounce) container part-skim ricotta cheese
1 egg, lightly beaten
2 cups reduced fat shredded mozzarella cheese, divided
1/4 cup grated parmesan cheese
Grated parmesan cheese and parsley for garnish

Toasted Turkey on Rye

2 cups shredded cabbage
6 tablespoons fat free or reduced fat thousand island dressing
1/2 teaspoon dillweed
1 (12-ounce) can SPAM Oven Roasted Turkey, thinly sliced
8 slices rye bread
4 ounces reduced fat Swiss cheese
Nonfat cooking spray

In small bowl, toss together cabbage, dressing and dill. Place 1/4 of SPAM on each of 4 slices of rye. Top with cabbage, cheese and remaining bread slices. Spray both sides of bread with nonstick cooking spray. Heat on hot griddle or in nonstick skillet until cheese melts and sandwiches are golden brown. Serves 4.

1 teaspoon prepared horseradish
8 slices whole grain bread, toasted
1 (12-ounce) can SPAM Oven Roasted Turkey, sliced wafer thin
4 ounces reduced fat Monterey Jack and Cheddar cheese, thinly sliced
1 small red onion, thinly sliced
4 lettuce leaves
2 Roma tomatoes, thinly sliced
8 slices JENNIE-O Turkey Bacon, cooked

In small bowl, stir together mayonnaise and horseradish. Spread 1/4 of this mixture onto each of 4 toasted bread slices. Top with turkey, cheese, onion, lettuce, tomato and bacon. Place remaining bread on top, slice and serve. Serves 4.
