Turkey Roll-Ups

6 (10-inch) flour tortillas
12 tablespoons fat free garden vegetable cream cheese
1 (12-ounce) can SPAM Oven Roasted Turkey, thinly sliced
6 lettuce leaves
4 Roma tomatoes, thinly sliced

Spread each tortilla with 2 Tbs. cream cheese. Top with SPAM, lettuce and tomato. Roll up and chill until ready to serve. To serve, slice diagonally in half or place toothpicks 1-inch apart and slice for appetizers. Serves 6.

Mediterranean Turkey Salad

1 (12-ounce) can SPAM Oven Roasted Turkey, sliced and cut into thin strips
2 (6.5-ounce) jars marinated artichoke hearts, drained
1 red bell pepper, cut into thin strips
2 ounces crumbled feta cheese
1 small red onion, thinly sliced
1/2 cup fat free Italian dressing
2 tablespoons kalamata olives, halved

Mix all ingredients lightly with dressing. Refrigerate 2 hours. If desired, serve on a lettuce-lined platter. Serves 4.

24 dried jumbo pasta shells
1 (12-ounce) can SPAM Oven Roasted Turkey
1 (15-ounce) container part-skim ricotta cheese
1/2 cup reduced fat mozzarella cheese, shredded
1/4 cup grated parmesan cheese
1 egg, slightly beaten
1 (10-ounce) package frozen chopped spinach, thawed and well drained
1/2 teaspoon nutmeg, grated
2 (15-ounce) containers fat free marinara sauce, divided, or 1 (30-ounce) jar reduced fat spaghetti sauce, divided
Fresh basil sprigs for garnish

Preheat oven to 350
