Sorry didn't mean to leave everybody hanging. I ended up making two eggs over easy with a slice of muenster cheese on an english muffin with a slice of bacon. Quite tasty.

Green chile is even better. About a half teaspoon in an omelet or on eggs over easy. I make a batch once or twice a month just so I have it available when I need it.

Green Chile

1 lb. Jalapeno Peppers

Boil in water with ½ t salt until tender.(About 20-25 minutes)

Let Cool

Peel

Chop with:

1 can whole peeled tomatoes

1 – 2 T finely chopped Onion

2 – 4 Cloves finely chopped or pressed Garlic

1 t Salt

The tomato can makes a good chile chopper. Cut the rim off and poke a few holes in the bottom so you do not pull a vacuum.

Lately I have been using the Del Monte Italian Tomatoes with Basil, Garlic, and Oregano.

I made some srs omelettes yesterday. Mine was loaded up with Habanero hot sauce, cheese, bacon, green peppers, mushrooms, onions, lots of pepper and some salt.
