I make those, my wife insists I make them a few times a year. I don't follow recipe other than my own mix of filling, usually ricotta, eggs, parm reg. grated cheese, pancetta or bacon, parsley, garlic . salt, a bit of olive oil, and black pepper. The key ingredient is a touch of nutmeg , topped with tomato sauce and grated cheese.
The mushrooms sound really good, never tried that but it does sound good.

You and I have a lot in common, I also believe they taste better the next day and I like the crunchy texture, exact same thing with lasagna.

I like the middle pizza pieces however when I have pizza and hot wings with blue cheese dressing for dipping I like to dip the crust in the dipping sauce esp. after I have dipped a few wings in it and get the essence of the wings/hot sauce with the blue cheese.
