Raptor, I'm going to have to respectfully disagree with you. Smoked turkey is delightful, and the soup one makes with the carcass has been stellar.

My smoker can hold a 12-16 lb. bird, and I'd love to give it a whack this coming November.

. . . that said, our regular family birdsmoker would oversmoke the bird about half the time. Also, one should use milder wood, like alder and fruitwood; do not use hickory and don't use that much oak.

Too much coke and too much smoke oak tree will get in your way.

The other problem with smoking a turkey is finding the right sized ZigZags for the job.

Sorry, Brian, I'm with Mom on this one. You can't beat a traditional oven roasted turkey dinner with dressing (with tamales is good), mashed potatoes, gravy -- lots of gravy, cauliflower with white sauce and little onions, , cranberry sauce, and hot rolls.

Also, coming up this weekend, King Taco all meat carne asada burritos with cilantro, onions, and lots of spicy salsa verde: Friday, Saturday, and Sunday for breakfast at 8 AM at the Long Beach GP. Tradition! (Easter was last Sunday.)

Au contraire, I love pearl onions. Anne Marie made beef stew in a crock pot with lots of pearl onions and lots of Coleman's mustard Sunday night. It was WONDERFUL! I had three helpings. Pearl onions are truly one of God's gifts.
