Rare, medium rare, medium or well done?
For steaks, I was a medium rare fan for ages. . . and still am, but a New York done medium by a GOOD cook with a proper sear and even cooking is an underrated art.
Burgers, medium, but I need to learn how to eat them well-done because Wisconsin.
Steak tartare should be. . . well, tartare (and is one of my favorites as well).
