Well my parents immigrated to Canada from southern Italy around the 50's. My parents always called it sarsa or sugo growing up, almost a peasant kind of cooking back in the days.
I think the term gravy may have started in Jersey ? I never heard it much until recent years when watching certain shows featuring characters from New Jersey. But I certainly understand how the term describes the goodness of the well cooked and meat packed sauce mom used to make every Sunday at our place.
