I have many fond memories of helping my Mom & the Aunts on my Dad's side make them in my Aunt's kitchen they had a production line goin one mixed the dough one rolled out the ropes, one cut them and then us kids helped roll them off the upside down Colander to have the lil holes make lil dimples in them, they cook better that way instead of the just solid dense ones
They would freeze bags of them
LOVE them still but haven't taken the time or effort to make any I do purchase the Vac Sealed ones sometimes and they are ok, just not as good as I remember the made ones

Ah man that sounds like my childhood Gina, you, Rob and I have very similar experiences. My mother and my aunt made them all the time as you describe. They did the final rolling over a ribbed piece of wood or an upside down fork to get the lines on them, not holes though. That is interesting about the colander method. My mother would freeze them in bags too.

Today we ate the ones in the vacuum sealed packages, they are different than the home-made ones for sure. My wife and I never make them at home, due to the work required, lol. Maybe some day.

With it being Good Friday, no meat today.

We are making seafood pasta at home tonight for dinner. Thin spaghetti topped with crab, shrimp, and grilled salmon, roasted garlic with olive oil and a tad of cream.

home made pizza, I made the dough this morning, pizza oven has to heat up to 900 degrees and everyone in the house gets their own personal pizza to their liking and toppings.
