my mother sent over a tray of lasagna with meatballs, I'm having some meatballs tonight but we are saving the lasagna for tomorrow.

Reminds me of when I was a kid and would come home from school and my Mom would be cooking homeade meatballs and gravy and she would have some italian bread for me to make a meatball sandwich for an after school snack. Enjoy it Joey it doesn't last forever.

Grilled chicken sandwich with bacon, lettuce, tomato and mayo. basically a chicken club sandwich and a salad of mixed greens.

Penne pasta with grilled chicken, mushrooms, onions , garlic , black pepper, pancetta, and really good olive oil , topped with reg. parm grated cheese. We usually put in some spinach but we didn't have any on hand. It turned out great though.

I had what is one of the cheapest, but still good, dinners possible last night. Macaroni and cheese that I bought at Aldi's for 34 cents and a spinach salad. Tallied up proportion wise total cost was under a dollar and it was good and I have leftovers.

Damn that is cheap. Do you use kraft mac and cheese or a different brand ? My go to recipe for mac and cheese was to top it with red chili pepper flakes to give it a bit of a bite, I also cooked it extra long so the cheese thickened up and not watery, my wife and son like the sauce more watery though.

This was actually the Aldi store brand which as just as good as the Kraft and less than half the price. I find some brands can be watery, this was good very creamy. I added an egg, some parmesan/romano and threw in a slice of cut up cheddar cheese and a little garlic powder and pepper. This may be t.m.i. but when I have other brands the next morning I am usually but perfectly fine this morning.

That's a nice modification to the box recipe, I like making it my own when I cook, much like you. I have tossed in some cheese slices before too. We get the Kraft kind mostly, no Aldi's here. We did buy some organic fancy brand a while back with less preservatives and stuff, but it wasn't very good.
