So, a long time ago somewhere in the galaxy called Washington State, some meathead-who-shall-remain-nameless had some other meathead friends with whom they would collectively brew beer.

Anyway, one of the meatheads made a stout with maple extract, and it was a huge success amongst all the other meatheads and the meathead's friends. . . given this, I see no reason to not attempt a bacon beer. . . the only question is, "What should be the base beer?"

I'm thinking either a red ale or a porter. . . maybe a stout, but you really want to let some of the pork/grease flavoring shine through. . .

Perhaps. . . I'm remebering that having too sharp a starting hops. . .it may cut through the saltiness of the bacon too much. . . but the rich mid-palate may pair perfectly.

. . . but there again, the idea of He'Brew and Bacon is not lost.

. . . theoretically, the fat will separate and get filtered out from the wort. . . really depends on whether you throw in cooked bacon, or boil the bacon in with the wort.
