INGREDIENTS (Nutrition)
* 2 eggs
* 3/4 teaspoon vanilla extract
* 1/8 teaspoon salt
* 1/3 cup white sugar
* 1/2 cup all-purpose flour
* 1 tablespoon lemon zest
* 1/4 cup butter
* 1/3 cup granulated sugar for decoration

DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Butter and flour 12 (3 inch) madeleine molds; set aside.
2. Melt butter and let cool to room temperature.
3. In a small mixing bowl, beat eggs, vanilla and salt at high speed until light.
4. Beating constantly, gradually add sugar; and continue beating at high speed until mixture is thick and pale and ribbons form in bowl when beaters are lifted, 5 to 10 minutes.
5. Sift flour into egg mixture 1/3 at a time, gently folding after each addition.
6. Add lemon zest and pour melted butter around edge of batter. Quickly but gently fold butter into batter. Spoon batter into molds; it will mound slightly above tops.
7. Bake 14 to 17 minutes, or until cakes are golden and the tops spring back when gently pressed with your fingertip.
8. Use the tip of the knife to loosen madeleines from pan; invert onto rack. Immediately sprinkle warm cookies with granulated sugar. Madeleines are best eaten the day they're baked. Leftover madeleines are wonderful when dunked into coffee or tea.
9. Variation: Chocolate Madeleines: Omit lemon zest. Increase sugar to 1/2 cup. Substitute 1/4 cup unsweetened cocoa powder for 2 tablespoons of the flour; sift into batter with flour.

I have another concern. The timing of WTD is conflicting with my triathlon season. I have a race on April 5th, but this event is in between that race and a race in May in Sarasota. You can see how this falls in the middle of the first quarter of my season, just as things start ramping up. Now I have a couple of options.
But before discussing those options I wanted to bring my concerns to your attention, knowing as I do that you would not want any concern to go unaddressed without at least considering different options to address that concern.
I could go ahead with the WTD trip as planned, but my concern is that I will be off schedule for the Ford Ironman World Championship Qualifier in September. That's in Clearwater; one option would be to move WTD to Clearwater. Of course a concern would then be what to rename it. However, incorporating this event around my race schedule is one option to address my concern and might reap positive benefits for the S2K community as a whole. I could put a logo on my Rudy Project aero profile helmet like "The Power of Dreams", maybe a I could put a large stylized "H" on my jersey. There are several options. S2000's could do course work during the bike, etc.
Another option to address my concern is to postpone the WTD. Now this isn't as hard as it seems...some options to consider include rebooking Fontana Village, and perhaps checking to see when any other car or motorcycle groups are going to be in the Deal's Gap area. It should then be relatively easy to switch around the dates because I am sure that the members of the other groups wouldn't want my concerns to go unanswered.
Another option to address my concern is to use my time as a mini-training camp in the mountains. I have done this before when I have raced in the area. Some additional concerns I have will then relate to the need for support, but let me give you some options to consider.
First, running...no problem there. I don't need any support. But would you please make sure to have my brand of sports' drink, Gatorade or Accelarade, available. I also will need a supply of Cliff's protein bars. Please make sure to have Hammergel available--apple is my favorite flavor.
Swim, again not a problem...I have swam the width of the Tennessee River right in the vicinity of the Fantana Village Marina. It's a distance of just over 2 miles both ways...Figure just under an hour for the swim...56 minutes if the conditions are o.k. Raul, would you please rent a canoe just for support. As I say I have done this twice in the past but never without a boat as support.
Bike....here it's difficult....I can get the bike up there....but I will need an S2K in front of me and one behind me....sort of like domestiques in cars. This is the only way to address my concern about safely riding on the Dragon on a bike. Raul, you take point, and since you are in charge (aren't you?) please appoint someone to ride behind me. The car behind can carry any food and drink I might need as well as a few spare wheels in the unlikely event that I need to do a quick flat change. Another concern is of course having a mechanic, but I understand that I am roughing it so I will take care of that myself. Don't concern yourself with routes. I have biked these roads over and over and can develop a few loops in the 50 to 60 mile range.
